The Kiritsuke knife is a sophisticated Japanese hybrid, combining the versatility of a Gyuto (chef’s knife) with the precision of a Yanagiba (slicer). Featuring a long, flat blade with a distinctive k-tip, it excels at precise slicing, chopping, and intricate cutting. Traditionally, single-beveled Kiritsuke knives were reserved for executive chefs as a symbol of status. Today, double-beveled Kiritsuke knives provide greater versatility, making them a refined, multi-purpose tool favored by professional and experienced home chefs alike.

The Shiosai Kiritsuke captures the spirit of its name, meaning “the sound of the tide”, through its geometric tsuchime hammering, soft kasumi finish, and polished edge. These design elements evoke sunlight dancing on the ocean and waves crashing against the shore, creating a knife that is both functional and visually striking.

Crafted with stainless cladding over a high-carbon SPG2 (Super Gold 2) steel core, this Kiritsuke offers exceptional edge retention, sharpness, and corrosion resistance. SPG2 steel, refined through powder metallurgy, provides a uniform fine-grain structure that makes the blade easy to sharpen while maintaining long-lasting performance.

The knife is complemented by Hado’s rare oak and lacquered cherry bark handle, offering superior comfort, balance, and a distinctive tactile feel. Each handle is unique, with natural variations in the cherry bark that enhance its beauty and elegance.
